Cinnamon Maple Zucchini Oatmeal Muffins

Ingredients

For 2 people ()

Recipe

  • 1 Packet ITG Plain Pancake
  • 1 Packet ITG Maple Oatmeal
  • 1/4 teaspoon(s) Baking Soda
  • 1/4 teaspoon(s) Baking Powder
  • 1/4 teaspoon(s) Cinnamon
  • 1 Egg or Egg White (beaten)
  • 1/2 teaspoon(s) Vanilla Extract
  • 4 ounce(s) Water
  • 1 teaspoon(s) Stevia
  • 3/4 Zucchini (finely grated, squeeze out all juices)

Cinnamon Maple Zucchini Oatmeal Muffins Directions

  1. Preheat oven to 350.
  2. Mix dry ingredients together.
  3. Mix wet ingredients together add to dry ingredients, mix until batter is smooth. (zuchinni is optional).
  4. Fill 4 non-stick pan muffin holes approx 2/3 full.  Should be enough batter for 4 muffins (2 ITG servings). 
  5. Bake for 15-20 mins. Serve warm.
